Ok all you diabetics looking for diabetes friendly recipes, gather around, here comes one for French toast. Really? You betcha! I know, you thought you were absolutely done eating French toast, so you’re going to love this. Now this isn’t going to be one of those diabetic friendly recipes that tell you the exact measurement of every ingredient, I never learned it that way. The way I learned was more like, “Yep, that looks about right.” So what I’m saying is, I’ll tell you what the ingredients are and then it’s up to you how much of each ingredient you put in. It’s all trial and error. I’ve been making it for so long I have an eye for what looks right for me. Sorry if I can’t be more specific, but you’ll enjoy experimenting on your own.
One other thing I should mention before I get started here is, I control my diabetes through diet and exercise. I lost the weight several years ago, so that has just been a maintenance thing. At any rate, I find that planning my meals works best for me. As an example, if I have toast with my breakfast meal, then more bread or pasta is out of the question for the rest of that day. I trade one item for another. That’s how I do it. The first thing you have to do is decide how much you are going to make since you might be making it for more than one or perhaps you are making several pieces for yourself, one or two for now and the rest for later. Sure, you can put the cooked pieces you don’t eat in a baggie, put them in the refrigerator and eat them later. All you have to do is warm them up. Ok, so now I’m going to make a list of items you will need.
Now, of all the ingredients in this diabetes friendly recipes for French toast, those with sugar content are the milk and the bread. If you restrain yourself from eating other breads, pasta and etc. on the day you have the French toast, there should be no reason for depriving yourself of a very tasty breakfast. And sure, you can put some of that sugar free syrup on the French toast or, if you prefer, maybe some sugar free jelly, jam or preserves. Doesn’t this sound like a great way for a diabetic to start their day once in a while?
